Simple Caribbean Potatoe Salad

Caribbean Potato Salad is a staple dish at Caribbean parties, get togethers, Bbq’s you name it, it is 9/10 likely to be on the menu.

This delicious potato salad is tasty, creamy and full of vegetables. This dish is perfect for the summer and pairs well with barbecues.

If you are planning a bbq or attending one, this recipe is the go to dish.  It is a very convenient dish as you can use any potatoes you may have on hand. My favourite potatoes to use are Salad potatoes. A simple pack of mixed vegetables from your local supermarket will mesh great with this recipe.

You can leave the eggs out but in this recipe I will be adding eggs.

In this recipe you will learn how to make the most simple Caribbean Potatoe salad recipe guaranteed to come out perfect everything.

Ingredients
  

  • 1 Pound potatoes cleaned peeled and cut into bite-sized pieces.
  • 2-3 Boiled Egg
  • 1 teaspoon of turmeric - for boiling potatoes I do this to give the potatoes a nice colour
  • 1 1/2 cup mixed vegetables frozen, mixed or canned - I used frozen

Salad sauce mixture

  • 1/2 cup mayonnaise
  • 2 tbsp Mustard
  • 1/4 teaspoon Cayenne Pepper
  • 1/2 tbsp of all purpose seasoning
  • 1/2 medium onion - grated
  • Salt and pepper to taste

Instructions
 

  • Place your potatoes and eggs in cold salted water, add in the tumeric powder and boil until potatoes are tender. Its important to not over boil the potatoes as you don’t want them to start mash out and need them to remain firm. Drain of the water and place into a bowl. 
    While your potatoes are boiling, boil your mixed vegetables for roughly 5 minutes. 
  • In bowl add your mayo, mustard, cayenne pepper and mix well. 
    Add your mixed vegetables into your boil with the potatoes.
  • Now add your mayo and mustard mixture, add all purpose seasoning, salt and pepper to taste and grated onions and stir until everything is combined.
