Brine and Marinating Poultry:

Marinade Benefits: When Cooking Poultry such as Chicken, it is best to marinade the meat overnight, this adds extra flavour.

Brine Benefits: Brining helps the chicken to retain moisture during the cooking process.

Brining makes the chicken more tender. Brining can protect chicken from overcooking. It prevents the chicken from becoming dry/flavourless if overcooked.

Dry Brine: A dry brine/marinade can help produce crispier skin

Wooden Chopping boards. 

Wooden chopping boards are gentle on knives compared to plastic boards.  They are not easily scratched and will hold their value over time.
