Jamaican Curry Chicken Recipe – Easy

Jamaican Curry Chicken has got to be in my top five of go to meals. The aromatics and spices blended together creates this popular spicy dish in Jamaica.

Aromatic such as garlic and ginger gives it a stand out flavour.

Lets talk Curry Powders, the curry powder used is the main ingredient and it is important that you use a good quality curry powder. My favourite curry powder to use is Betapac curry which is very popular in Jamaica. Using this curry powder guarantees the most flavourful curry.

Jamaican Curry Chicken Recipe

Prep Time 20 minutes
Cook Time 1 hour

Ingredients
  

  • 1 Kg Chicken Thighs cut into small/medium pieces
  • 1 tbsp All purpose seasoning
  • 1 tbsp Meat/chicken seasoning
  • 1/2 tbsp Paprika
  • 1/2 tbsp Cayenne Pepper
  • 1 tbsp Garlic Granules
  • 2 tbsp Ginger minced
  • 1 Medium Onion
  • 1 Spring onion
  • 1 Scotch Bonnet Pepper adjust to your taste, remove the seeds
  • 3 Sprigs of Thyme

Instructions
 

  • Chop up chicken thighs into small pieces, add chopped onion, spring onion, garlic, ginger, Scotch bonnet, thyme, and all powder seasonings. 
  • Mix well, leave to marinate for at least 1 hour or overnight
  • Heat pot with vegetable oil, stir in 1/2 tablespoon of curry powder. Stir and cook for about 20-30 seconds.
  • Stir in chicken, leave on medium heat for about 5 minutes, the chicken will start to spring its own water. 
  • Add 1/2 cup of water, and reduce the heat to medium low and allow to cook for at least 30-35 minutes stirring occasionally.
    Once chicken is cooked remove from heat and serve.
