Jamaican Curry Chicken Recipe

Ingredients
  

  • 1 Kg Chicken Thighs cut into small/medium pieces
  • 1 tbsp All purpose seasoning
  • 1 tbsp Meat/chicken seasoning
  • 1/2 tbsp Paprika
  • 1/2 tbsp Cayenne Pepper
  • 1 tbsp Garlic Granules
  • 2 tbsp Ginger minced
  • 1 Medium Onion
  • 1 Spring onion
  • 1 Scotch Bonnet Pepper adjust to your taste, remove the seeds
  • 3 Sprigs of Thyme

Instructions
 

  • Chop up chicken thighs into small pieces, add chopped onion, spring onion, garlic, ginger, Scotch bonnet, thyme, and all powder seasonings. 
  • Mix well, leave to marinate for at least 1 hour or overnight
  • Heat pot with vegetable oil, stir in 1/2 tablespoon of curry powder. Stir and cook for about 20-30 seconds.
  • Stir in chicken, leave on medium heat for about 5 minutes, the chicken will start to spring its own water. 
  • Add 1/2 cup of water, and reduce the heat to medium low and allow to cook for at least 30-35 minutes stirring occasionally.
    Once chicken is cooked remove from heat and serve.
