Chop up chicken thighs into small pieces, add chopped onion, spring onion, garlic, ginger, Scotch bonnet, thyme, and all powder seasonings.
Mix well, leave to marinate for at least 1 hour or overnight
Heat pot with vegetable oil, stir in 1/2 tablespoon of curry powder. Stir and cook for about 20-30 seconds.
Stir in chicken, leave on medium heat for about 5 minutes, the chicken will start to spring its own water.
Add 1/2 cup of water, and reduce the heat to medium low and allow to cook for at least 30-35 minutes stirring occasionally. Once chicken is cooked remove from heat and serve.
