Ackee and Saltfish Recipe

Ingredients
  

  • 250 Grams Salted Codfish
  • 1 Can Ackee or Fresh Ackee if you have
  • 3 cloves Garlic minced
  • 1 medium onion diced
  • 1 Large Tomatoe diced
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • 1 Scallion diced
  • 1/2 Scotch bonnet pepper diced, seeds removed
  • 1/2 tbsp Fish Seasoning seasoning
  • 1/2 tbsp All purpose seasoning
  • 1/2 tsp Cayenne Pepper
  • 1 tbsp Cracked Black Pepper
  • 1 tbsp Pimento Berries
  • 2 tbsp cooking oil

Instructions
 

  • Place the salt cod in a pot and cover with cold water. Bring to boil, then boil for 15 minutes. Drain and add fresh cold water to cover. Repeat this process if you are not happy with the saltiness when tasted.  Set aside. 
  • In a large frying pan. Pour in your oil into the frying pan and place over medium to high heat. Once the oil is sizzling hot, turn your heat down to low-medium heat. Add the onion, garlic, spring onions, scotch bonnet, then cook until soft,  for around 5 minutes. 
  • Add the salted cod, fish seasoning, add some cracked black pepper, thyme and pimento berries. Stir together and cook for 2 minutes. 
  • Next, add in the red and green bell peppers with your tomato. Mix together and cook down for 2 minutes. Now you will add in your ackee and add in a little more black pepper.
  • Gently fold n the ackee. Ackee is very soft so it is very important you carefully fold it in.  Once folded in simmer for 5 minutes and enjoy.
